Ingredients

  • 200 g (7 oz) butter
  • 16 sage leaves
  • shaved Parmesan cheese, to garnish

Method

1. Melt the butter over low heat in a small saucepan, without stirring or shaking. Carefully pour the clear butter into a bowl and discard the remaining white sediment.

2. Return the clarified butter to a clean pan and heat gently over medium heat. Add the sage leaves and cook until crisp but not brown. Remove and drain on paper towels. Reserve the warm butter.

3. Serve the hot pasta topped with the warm sage butter and leaves. Season with salt and pepper and garnish with shaved Parmesan.
