Ingredients
- 6 large potatoes
- 1 1/4 c. milk
- 1 1/4 c. water
- salt and freshly ground pepper
- 2 to 4 Tbsp. unsalted butter
- grated rind of 1 very large lemon or 2 smaller ones
Method
- Peel potatoes.
- Cut them in equal-size pieces.
- Put them into a saucepan and cover with milk and water.
- Add large pinch of salt.
- Bring to a boil and simmer gently until soft.
- Drain and mash to a smooth puree.
- Stir in the butter and lemon rind; salt and pepper to taste.
- Serve at once.
