Ingredients
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. soda
- 3/4 c. flour
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- chopped nuts
Method
- Grease jelly roll pan.
- Line with wax paper; grease and flour paper.
- Beat eggs and sugar until light and fluffy.
- Add pumpkin; mix well.
- Stir in flour, soda, salt and cinnamon which have been mixed together.
- Spread in pan; sprinkle with nuts.
- Bake at 375° for 15 minutes.
- Sprinkle a tea towel or cheesecloth with powdered sugar.
- Turn cake upside-down onto towel.
- Remove wax paper and roll up in towel and cool.
- Unroll; spread with filling and re-roll.
- Refrigerate.
