Ingredients

  • 1/2 c. raisins
  • 1/4 c. rum
  • 1/4 c. water
  • 3/4 c. firmly packed brown sugar
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1 (16 oz.) can pumpkin
  • 2 eggs
  • 1 c. evaporated milk
  • 1 unbaked pie crust
  • whipped cream

Method

  • Combine raisins, rum and water in a small bowl; let stand 20 minutes.
  • Combine brown sugar, flour, salt and spices in large bowl, stirring well.
  • Add raisin mixture, pumpkin, eggs and milk; stirring well.
  • Pour filling into pastry shell.
  • Bake at 450° for 20 minutes, reduce heat to 350° and bake additional 30 minutes or until set.
  • Cool.
  • Serve with whipped cream topping.
