- 1/2 c. raisins
- 1/4 c. rum
- 1/4 c. water
- 3/4 c. firmly packed brown sugar
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1 (16 oz.) can pumpkin
- 2 eggs
- 1 c. evaporated milk
- 1 unbaked pie crust
- whipped cream
Method
- Combine raisins, rum and water in a small bowl; let stand 20 minutes.
- Combine brown sugar, flour, salt and spices in large bowl, stirring well.
- Add raisin mixture, pumpkin, eggs and milk; stirring well.
- Pour filling into pastry shell.
- Bake at 450° for 20 minutes, reduce heat to 350° and bake additional 30 minutes or until set.
- Cool.
- Serve with whipped cream topping.
