Ingredients
- 1/2 cup pureed pumpkin
- 1 egg
- 1/4 teaspoon stevia or 2 tbsp raw honey
- 1 teaspoon pumpkin pie spice
- crust optional:
- 1 tablespoon butter
- 1 tablespoon shredded coconut
- 1 tablespoon almond flour
Method
- Put butter in ramekin and microwave 30 seconds to melt.
- Add shredded coconut and almond flour to the butter and mix. Pat it down to form the crust.
- In separate bowl or Magic Bullet, mix pumpkin, egg, pumpkin spice, and sweetener til smooth.
- Pour over crust and microwave for 2 to 2-1/2 minutes or until center is not wet.
- Optional: Add toppings of choice... coconut butter, honey or maple syrup, pecans, whipped cream, cinnamon or butter.
