Ingredients

  • 1/2 cup pureed pumpkin
  • 1 egg
  • 1/4 teaspoon stevia or 2 tbsp raw honey
  • 1 teaspoon pumpkin pie spice
  • crust optional:
  • 1 tablespoon butter
  • 1 tablespoon shredded coconut
  • 1 tablespoon almond flour

Method

  • Put butter in ramekin and microwave 30 seconds to melt.
  • Add shredded coconut and almond flour to the butter and mix. Pat it down to form the crust.
  • In separate bowl or Magic Bullet, mix pumpkin, egg, pumpkin spice, and sweetener til smooth.
  • Pour over crust and microwave for 2 to 2-1/2 minutes or until center is not wet.
  • Optional: Add toppings of choice... coconut butter, honey or maple syrup, pecans, whipped cream, cinnamon or butter.
