Ingredients
- 2 c. pumpkin or squash (cooked)
- 1 c. brown sugar
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1 tsp. cinnamon
- 3 slightly beaten eggs
- 1 1/2 c. milk
- 1/2 c. cream or evaporated milk
- unbaked pastry shell
- sweetened whipped cream
Method
- Mix first 5 ingredients.
- Then add the rest.
- Mix well.
- Pour into unbaked pie shell.
- Bake in hot oven at 450° for about 10 minutes, then reduce heat to moderate 325° about 40 minutes or until filling is firm.
- Serve plain or with sweetened whipped cream.
