Ingredients

  • 1 cup shortening
  • 1 cup canned pumpkin
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 tablespoons butter
  • 4 teaspoons milk
  • 12 cup brown sugar
  • 1 cup powdered sugar
  • 34 teaspoon vanilla

Method

  • Icing (Make first):.
  • Heat the butter, milk, and brown sugar together in a saucepan until smooth and melted.
  • Let cool slightly and mix in the powdered sugar and vanilla.
  • Set aside.
  • Cookies:.
  • Cream together with a mixer the shortening, canned pumpkin, sugar, and the egg.
  • Mix in the flour, baking soda, salt, and cinnamon till smooth.
  • Drop by spoonful on a greased cookie sheet.
  • Bake in 375 degree oven for 10-12 minutes.
  • Spread the icing on the warm cookies.
