Ingredients

  • 1 cup Canned Pumpkin
  • 1 cup Sugar
  • 1/2 cups Vegetable Oil
  • 1 whole Egg
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 Tablespoon Skim Milk
  • 1 Tablespoon Vanilla Extract
  • 2 cups Semi-Sweet Chocolate Chips

Method

  • Preheat oven to 350 degrees F.
  • Combine pumpkin, sugar, vegetable oil, and egg. Set aside.
  • In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
  • Mix the baking soda with the milk and then add it into the flour. Add pumpkin mixture into the flour mix and stir well. Stir in vanilla and chocolate chips.
  • Drop spoonfuls onto a greased cookie sheet and bake in the preheated oven for 8-12 minutes until cookies are browned and firm.
