- 1 cup Canned Pumpkin
- 1 cup Sugar
- 1/2 cups Vegetable Oil
- 1 whole Egg
- 2 cups Flour
- 2 teaspoons Baking Powder
- 2 teaspoons Ground Cinnamon
- 1/2 teaspoons Salt
- 1 teaspoon Baking Soda
- 1 Tablespoon Skim Milk
- 1 Tablespoon Vanilla Extract
- 2 cups Semi-Sweet Chocolate Chips
Method
- Preheat oven to 350 degrees F.
- Combine pumpkin, sugar, vegetable oil, and egg. Set aside.
- In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
- Mix the baking soda with the milk and then add it into the flour. Add pumpkin mixture into the flour mix and stir well. Stir in vanilla and chocolate chips.
- Drop spoonfuls onto a greased cookie sheet and bake in the preheated oven for 8-12 minutes until cookies are browned and firm.
