Ingredients
- 4 medium carrots, scraped and cut into 2-inch strips
- 1/3 c. water
- 2 c. sugar snap peas, with strings removed but not shelled
- 2 Tbsp. reduced-calorie margarine or olive oil
- 1/2 tsp. salt or salt substitute
Method
- Combine carrots and water in a 2 1/2-quart glass baking dish. Cover with plastic wrap, leaving one corner loose for steam to escape, or cover with glass cover.
- Microwave on High for 5 minutes, stirring after three minutes.
- Stir in peas and seasonings.
- Microwave on High 2 minutes.
- Let stand 1 minute, covered.
- Stir and serve.
- Toss with fresh mint, if desired.
