Ingredients

  • 4 medium carrots, scraped and cut into 2-inch strips
  • 1/3 c. water
  • 2 c. sugar snap peas, with strings removed but not shelled
  • 2 Tbsp. reduced-calorie margarine or olive oil
  • 1/2 tsp. salt or salt substitute

Method

  • Combine carrots and water in a 2 1/2-quart glass baking dish. Cover with plastic wrap, leaving one corner loose for steam to escape, or cover with glass cover.
  • Microwave on High for 5 minutes, stirring after three minutes.
  • Stir in peas and seasonings.
  • Microwave on High 2 minutes.
  • Let stand 1 minute, covered.
  • Stir and serve.
  • Toss with fresh mint, if desired.
