Ingredients
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 3/4 c. flour
- 1 tsp. baking soda
- 2 tsp. cinnamon
Method
- Beat eggs for 5 minutes; add sugar.
- Stir in pumpkin and flour.
- Stir and add baking soda and cinnamon.
- Line a jelly roll pan with wax paper and grease paper.
- Pour in the cake, spreading evenly, and sprinkle with chopped nuts, if desired.
- Bake at 375° for 15 minutes.
- Loosen edges with knife and turn over onto tea towel that has been sprinkled with 10x sugar.
- Roll towel and cool for 20 minutes.
- Unroll and spread filling, then re-roll.
