Ingredients

  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 3/4 c. flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon

Method

  • Beat eggs for 5 minutes; add sugar.
  • Stir in pumpkin and flour.
  • Stir and add baking soda and cinnamon.
  • Line a jelly roll pan with wax paper and grease paper.
  • Pour in the cake, spreading evenly, and sprinkle with chopped nuts, if desired.
  • Bake at 375° for 15 minutes.
  • Loosen edges with knife and turn over onto tea towel that has been sprinkled with 10x sugar.
  • Roll towel and cool for 20 minutes.
  • Unroll and spread filling, then re-roll.
