Ingredients

  • 1 1/2 c. sugar
  • 3 eggs
  • 1 c. buttermilk
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 c. prunes, cooked and chopped
  • 1 c. vegetable oil
  • 1 1/2 tsp. baking soda
  • 2 c. all-purpose flour
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 1 c. pecans, chopped

Method

  • Combine sugar, oil, and eggs in mixing bowl; beat on medium speed with electric mixer 1 minute.
  • Dissolve soda and buttermilk; set aside. Combine flour and spices; add to sugar mixture, beginning and ending with the flour mixture.
  • Mix well after each addition.
  • Stir in vanilla, prunes, and pecans.
  • Pour into a greased and floured 9 x 13 x 2 inch pan.
  • Bake at 350° for 35 minutes or until toothpick comes out clean; cool.
