Ingredients

  • 2 teaspoons salt
  • 1teaspoon paprika
  • 3/4 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon thyme
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 3 pound chicken
  • 1 cup chopped onions

Method

  • In a small bowl, throughly combine salt, paprika, cayenne pepper,, onion powder, and black pepper. Rub mixture into chicke, insdie and out, patting mixture into skin to make sure it is evenly distributed and down deep into the skin. Place in a sealable plastic bag, seal and refrigerate overnight.
  • When ready to roast, stuff the chicken with onions. Roast uncovered, at 250, degrees about 5 hours, basting occasionally with pan juices, or until pan juices start to caramelize on bottom of pan and chicken is golden brown.
