Ingredients

  • 1 c. buttermilk
  • 1 tsp. baking soda
  • 3 c. sugar
  • 1 c. butter, melted
  • 2 tsp. light corn syrup
  • pinch of salt
  • 1 tsp. vanilla extract
  • 3 c. broken pecans

Method

  • Combine buttermilk and baking soda in a 5 qt. saucepan, stirring until soda is dissolved; add sugar, butter, corn syrup, and salt.
  • Bring mixture to a boil; cook, stirring constantly until mixture reaches soft ball stage (236°).
  • Remove from heat, and let stand until lukewarm (110°).
  • Add vanilla and pecans to candy; beat until mixture begins to thicken and loses its gloss. Drop by Tbsp. onto a lightly buttered baking sheet or waxed paper; let stand until firm.
  • Store in airtight container.
