Ingredients
- 1 c. buttermilk
- 1 tsp. baking soda
- 3 c. sugar
- 1 c. butter, melted
- 2 tsp. light corn syrup
- pinch of salt
- 1 tsp. vanilla extract
- 3 c. broken pecans
Method
- Combine buttermilk and baking soda in a 5 qt. saucepan, stirring until soda is dissolved; add sugar, butter, corn syrup, and salt.
- Bring mixture to a boil; cook, stirring constantly until mixture reaches soft ball stage (236°).
- Remove from heat, and let stand until lukewarm (110°).
- Add vanilla and pecans to candy; beat until mixture begins to thicken and loses its gloss. Drop by Tbsp. onto a lightly buttered baking sheet or waxed paper; let stand until firm.
- Store in airtight container.
