Ingredients

  • 3 Tbsp. margarine
  • 3 Tbsp. chopped celery
  • 3 Tbsp. chopped bell pepper
  • 3 Tbsp. chopped onion
  • 2 Tbsp. flour
  • 1/4 tsp. black pepper
  • 1/4 tsp. Season-All
  • 1 (16 oz.) can white, sliced potatoes
  • 1 (6 oz.) can evaporated milk
  • 3 slices American cheese
  • 2 Tbsp. pimento (optional)

Method

  • In a large skillet, melt margarine.
  • Add and saute celery, bell pepper and onion.
  • After well sauteed, add flour, black pepper and Season-All; stir well.
  • Add the water from can of potatoes and can of milk; mix well.
  • If too thick, add a little water.
  • Add cheese and stir.
  • Add sliced potatoes and pimento, if desired.
  • Mix all very well.
  • Pour into a baking dish and bake until bubbly.
