Ingredients
- 3 Tbsp. margarine
- 3 Tbsp. chopped celery
- 3 Tbsp. chopped bell pepper
- 3 Tbsp. chopped onion
- 2 Tbsp. flour
- 1/4 tsp. black pepper
- 1/4 tsp. Season-All
- 1 (16 oz.) can white, sliced potatoes
- 1 (6 oz.) can evaporated milk
- 3 slices American cheese
- 2 Tbsp. pimento (optional)
Method
- In a large skillet, melt margarine.
- Add and saute celery, bell pepper and onion.
- After well sauteed, add flour, black pepper and Season-All; stir well.
- Add the water from can of potatoes and can of milk; mix well.
- If too thick, add a little water.
- Add cheese and stir.
- Add sliced potatoes and pimento, if desired.
- Mix all very well.
- Pour into a baking dish and bake until bubbly.
