Ingredients

  • 6 to 8 large potatoes, cooked, peeled and mashed
  • 1 c. (8 oz.) sour cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped onions
  • 1/4 c. margarine
  • 1 pkg. frozen, chopped spinach, thawed and well drained
  • 1 c. (4 oz.) shredded Cheddar cheese

Method

  • In a large bowl, combine all ingredients, except cheese. Spoon in greased 2-quart casserole.
  • Bake, uncovered, at 400° for 15 minutes. Top with cheese and bake 5 minutes longer.
  • Serves 6.
