Ingredients
- 6 to 8 large potatoes, cooked, peeled and mashed
- 1 c. (8 oz.) sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. chopped onions
- 1/4 c. margarine
- 1 pkg. frozen, chopped spinach, thawed and well drained
- 1 c. (4 oz.) shredded Cheddar cheese
Method
- In a large bowl, combine all ingredients, except cheese. Spoon in greased 2-quart casserole.
- Bake, uncovered, at 400° for 15 minutes. Top with cheese and bake 5 minutes longer.
- Serves 6.
