Ingredients

  • 2 slices Good Bread
  • 1/2 teaspoons Yellow Mustard
  • 2 slices Ham
  • 2 slices Roasted Pork (or Smoked Turkey If You Are Lacking)
  • 3 slices Good Dill Pickles
  • 2 slices Swiss Cheese, Or If You Dare, Manchego
  • 1 teaspoon Butter
  • Oil For Pan

Method

  • Most people use a panini grill for these sandwiches, but I use a good cast iron pan (or grill pan) weighted down with another cast iron pan.
  • Refer to the related link for pictures.
  • Heat the cast iron pan on medium low for about 3-5 minutes while you assemble the sandwich.
  • Butter the bread, and layer ingredients to taste.
  • Put enough olive oil (you can use butter or vegetable oil) in the pan, let oil heat for a minute and gently place the sandwich in the pan.
  • Weight down with whatever works for you.
  • I use another cast iron pan and my handy tea kettle filled with water.
  • Cook low and slow, checking after about 3 minutes.
  • Flip and repeat.
