- 4 large potatoes (waxy type rather than mealy ones)
- 1/2 c. salad oil
- 1/4 c. vinegar
- 1 clove garlic, mashed
- 2 green onions
- 1 small can pimientos, drained
- 2 hard-boiled eggs
- 1 doz. large ripe olives, cut up
- salt and pepper
- pinch of dry mustard
- dash of cayenne or Tabasco
- 4 or 5 Tbsp. sour cream
Method
- Boil potatoes in salted water with skins on.
- Do not overcook. Peel and cut up quickly while hot.
- Marinate with the oil and vinegar in which the mashed garlic has been soaking.
