Ingredients

  • Batter:
  • 1 pint of fresh or frozen blueberries
  • 1 Tablespoon lemon juice
  • 1/4 cup softened butter
  • 3/4 cup organic sugar
  • 1/2 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Topping:
  • 1/4 cup of organic sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt

Method

  • Grease an 8x8" square pan.
  • Preheat the oven to 375 F.
  • Put 1 pint of fresh or frozen blueberries in the bottom of the pan and sprinkle with 1 tablespoon of lemon juice. Set aside.
  • Cream together 1/4 cup softened butter and 3/4 cup organic sugar.
  • Add 1/2 cup milk, 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon salt.
  • Spread over berries - it will be thick so it needs to be done by the spoonful. Do not stir.
  • Topping:
  • Mix in bowl 1/4 cup of organic sugar, 1 tablespoon cornstarch and 1/2 teaspoon salt. Sprinkle over batter.
  • Pour on 1 cup boiling water. DO NOT STIR IN.
  • Put in the oven and bake for 45 to 60 minutes. (Use the longer time if berries were frozen, shorter time if fresh.)
