Ingredients

  • 1/2 c. flour
  • 1/3 c. sugar
  • 1/4 tsp. salt
  • 3 c. milk
  • 3 egg yolks, slightly beaten
  • 1 1/2 tsp. vanilla
  • 1 Tbsp. margarine
  • 3/4 c. flaked or shredded coconut

Method

  • Add sugar and salt to flour and stir.
  • Add milk gradually, stirring until smooth.
  • Cook over heat until mixture thickens, stirring constantly.
  • Remove from heat.
  • Add small amount of cooked mixture to egg yolks, then stir eggs into cooked mixture. Return to heat; bring to boil.
  • Remove from heat.
  • Stir in vanilla, margarine and 3/4 cup coconut.
