Ingredients
- 1/2 c. flour
- 1/3 c. sugar
- 1/4 tsp. salt
- 3 c. milk
- 3 egg yolks, slightly beaten
- 1 1/2 tsp. vanilla
- 1 Tbsp. margarine
- 3/4 c. flaked or shredded coconut
Method
- Add sugar and salt to flour and stir.
- Add milk gradually, stirring until smooth.
- Cook over heat until mixture thickens, stirring constantly.
- Remove from heat.
- Add small amount of cooked mixture to egg yolks, then stir eggs into cooked mixture. Return to heat; bring to boil.
- Remove from heat.
- Stir in vanilla, margarine and 3/4 cup coconut.
