Ingredients

  • 7 to 8 medium Irish potatoes
  • 4 Tbsp. dill pickle relish
  • 4 Tbsp. sweet pickle relish
  • 4 Tbsp. hot dog relish
  • 2 Tbsp. mustard
  • 2 Tbsp. mayonnaise
  • 1/2 fresh bell pepper, chopped
  • 1/2 onion, chopped

Method

  • Wash potatoes; cook until done, but firm, about 20 minutes. Drain.
  • Quarter potatoes, then cut into medium size pieces.
  • Mix the pickles, relish, mustard and mayonnaise.
  • Taste and add additional ingredients as needed.
  • Just before you serve the salad, toss potatoes gently in with the other ingredients, the chopped pepper and onion.
