Ingredients
- 6 medium red potatoes
- 1 large onion, chopped
- 8 medium hard-boiled eggs
- 3/4 c. sweet pickles, chopped
- 1 Tbsp. mustard
- 5 Tbsp. Hellmann's mayonnaise
- salt and pepper to taste
Method
- Boil potatoes until tender.
- Cut into wedges and place in large bowl.
- Do not peel.
- Cut bad spots off of potatoes.
- Add hard-boiled eggs after they cool and are sliced.
- Mix onion and pickles and add to potatoes and eggs.
- Stir in mustard and mayonnaise.
- Add more mayonnaise if needed.
- Salt and pepper to taste.
- Place in refrigerator for at least 1 hour before serving.
