Ingredients

  • 6 medium red potatoes
  • 1 large onion, chopped
  • 8 medium hard-boiled eggs
  • 3/4 c. sweet pickles, chopped
  • 1 Tbsp. mustard
  • 5 Tbsp. Hellmann's mayonnaise
  • salt and pepper to taste

Method

  • Boil potatoes until tender.
  • Cut into wedges and place in large bowl.
  • Do not peel.
  • Cut bad spots off of potatoes.
  • Add hard-boiled eggs after they cool and are sliced.
  • Mix onion and pickles and add to potatoes and eggs.
  • Stir in mustard and mayonnaise.
  • Add more mayonnaise if needed.
  • Salt and pepper to taste.
  • Place in refrigerator for at least 1 hour before serving.
