Ingredients

  • 2 lb. potatoes
  • 1 egg
  • 1/3 c. finely chopped onion
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/4 c. butter or oleo

Method

  • Wash potatoes.
  • Pare thinly and remove eyes.
  • Shred enough potatoes to make 4 cups.
  • Drain potatoes thoroughly.
  • In a small mixer bowl, beat egg until thick and lemon colored.
  • Mix potatoes, onion, flour and salt.
  • Melt butter or oleo in a large skillet over low heat.
  • Shape potato mixture into 8 patties. Place in skillet.
  • Cook over medium heat, turning once, about 5 minutes or until golden brown.
