Ingredients
- 2 lb. potatoes
- 1 egg
- 1/3 c. finely chopped onion
- 3 Tbsp. flour
- 1 tsp. salt
- 1/4 c. butter or oleo
Method
- Wash potatoes.
- Pare thinly and remove eyes.
- Shred enough potatoes to make 4 cups.
- Drain potatoes thoroughly.
- In a small mixer bowl, beat egg until thick and lemon colored.
- Mix potatoes, onion, flour and salt.
- Melt butter or oleo in a large skillet over low heat.
- Shape potato mixture into 8 patties. Place in skillet.
- Cook over medium heat, turning once, about 5 minutes or until golden brown.
