Ingredients

  • 3 lb. potatoes
  • 1/4 lb. bacon
  • 1/2 c. sugar
  • 1/4 c. flour
  • 1 Tbsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. vinegar
  • 1 c. water
  • 1/2 c. chopped celery
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 4 hard-boiled eggs, sliced
  • 1 large (4 oz.) can pimentos, sliced

Method

  • I boil potatoes with jackets on.
  • Pare and boil potatoes until done, but firm.
  • Cool.
  • Cut bacon into small pieces and fry until crisp.
  • Remove bacon and fat from pan.
  • Place 1/4 cup bacon fat in the pan.
  • Stir in sugar, flour, salt and pepper.
  • Add vinegar and water.
  • Cook until thick, about 5 minutes.
  • Slice cool potatoes and combine with bacon, celery, onion, green pepper, eggs and pimentos.
  • Pour dressing over potato mixture and mix lightly. Place in casserole.
  • Serve warm.
  • Serves 10 to 12.
