Ingredients
- 3 lb. potatoes
- 1/4 lb. bacon
- 1/2 c. sugar
- 1/4 c. flour
- 1 Tbsp. salt
- 1/8 tsp. pepper
- 1/4 c. vinegar
- 1 c. water
- 1/2 c. chopped celery
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 4 hard-boiled eggs, sliced
- 1 large (4 oz.) can pimentos, sliced
Method
- I boil potatoes with jackets on.
- Pare and boil potatoes until done, but firm.
- Cool.
- Cut bacon into small pieces and fry until crisp.
- Remove bacon and fat from pan.
- Place 1/4 cup bacon fat in the pan.
- Stir in sugar, flour, salt and pepper.
- Add vinegar and water.
- Cook until thick, about 5 minutes.
- Slice cool potatoes and combine with bacon, celery, onion, green pepper, eggs and pimentos.
- Pour dressing over potato mixture and mix lightly. Place in casserole.
- Serve warm.
- Serves 10 to 12.
