Ingredients

  • 1/2 c. margarine
  • 1 pkg. yellow cake mix
  • 1/2 c. coconut
  • 4 to 6 c. apple slices, peeled and cored
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 c. sour cream
  • 1 egg

Method

  • In a medium-large bowl, cut margarine into dry cake mix until crumbly.
  • Mix in coconut.
  • Spray nonstick spray on a 9 x 13-inch aluminum baking pan.
  • Pat dry cake mixture lightly into pan (don't press), building up edges slightly.
  • Bake 10 minutes at 350°. Arrange apples on warm crust.
  • Mix sugar and cinnamon. Sprinkle over apples.
  • Mix sour cream and egg. Drizzle over all.
  • Bake 25 minutes at 350° or until light brown.
  • Serve warm or chilled. Refrigerate leftovers.
  • Also delicious using fresh peach slices.
