Ingredients
- 1/2 c. margarine
- 1 pkg. yellow cake mix
- 1/2 c. coconut
- 4 to 6 c. apple slices, peeled and cored
- 1/2 c. sugar
- 1 tsp. cinnamon
- 1 c. sour cream
- 1 egg
Method
- In a medium-large bowl, cut margarine into dry cake mix until crumbly.
- Mix in coconut.
- Spray nonstick spray on a 9 x 13-inch aluminum baking pan.
- Pat dry cake mixture lightly into pan (don't press), building up edges slightly.
- Bake 10 minutes at 350°. Arrange apples on warm crust.
- Mix sugar and cinnamon. Sprinkle over apples.
- Mix sour cream and egg. Drizzle over all.
- Bake 25 minutes at 350° or until light brown.
- Serve warm or chilled. Refrigerate leftovers.
- Also delicious using fresh peach slices.
