Ingredients
- 3 c. mashed potatoes, chilled (about 4 medium)
- 2 eggs, beaten or equivalent of egg substitute
- 1/4 c. all-purpose flour
- 1 small onion, finely chopped
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. baking soda
Method
- Mix all ingredients.
- Drop about 1/4 cup batter for each pancake onto a hot greased griddle.
- Cook about 5 minutes or until brown; turn once to brown other side.
