Ingredients

  • 9 medium potatoes, cooked, peeled and shredded the day before
  • 1/2 c. chopped onion
  • 1 1/2 c. Cheddar cheese, shredded
  • 1 pt. sour cream
  • 1/2 c. butter, melted
  • 1 Tbsp. chives
  • 1 can cream of chicken soup
  • 1 1/2 c. crushed cornflakes

Method

  • Preheat oven to 350°. Spray oblong pan with cooking spray. Add all ingredients, except butter and cornflakes, to potatoes. Mix; spread in pan.
  • Mix cornflakes and melted butter; spread over potato mixture. Bake at 350° for 1 hour.
