Ingredients
- 9 medium potatoes, cooked, peeled and shredded the day before
- 1/2 c. chopped onion
- 1 1/2 c. Cheddar cheese, shredded
- 1 pt. sour cream
- 1/2 c. butter, melted
- 1 Tbsp. chives
- 1 can cream of chicken soup
- 1 1/2 c. crushed cornflakes
Method
- Preheat oven to 350°. Spray oblong pan with cooking spray. Add all ingredients, except butter and cornflakes, to potatoes. Mix; spread in pan.
- Mix cornflakes and melted butter; spread over potato mixture. Bake at 350° for 1 hour.
