Ingredients
- 1 Tbsp. finely chopped onion
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 pkg. frozen chopped spinach
- 2 c. chicken broth
- 2 c. half and half cream
Method
- Saute onion in butter.
- Add flour, salt and pepper.
- Cook over low heat until smooth and bubbly.
- Add chicken broth.
- Cook until thickened.
- Add spinach.
- Cook briefly until spinach is broken up. Pour into blender and blend.
- Pour back into pan, add cream and heat.
- Do not boil.
- Sprinkle with croutons.
- Serve very hot.
