Ingredients

  • 1 Tbsp. finely chopped onion
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 pkg. frozen chopped spinach
  • 2 c. chicken broth
  • 2 c. half and half cream

Method

  • Saute onion in butter.
  • Add flour, salt and pepper.
  • Cook over low heat until smooth and bubbly.
  • Add chicken broth.
  • Cook until thickened.
  • Add spinach.
  • Cook briefly until spinach is broken up. Pour into blender and blend.
  • Pour back into pan, add cream and heat.
  • Do not boil.
  • Sprinkle with croutons.
  • Serve very hot.
