Ingredients

  • 4 c. sliced potatoes
  • 2 c. water
  • 2 tsp. salt
  • 1 small onion
  • 1 Tbsp. oil
  • 1 tsp. parsley
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 3 c. warm milk
  • 1 c. grated cheese
  • 2 Tbsp. oleo

Method

  • Cook the potatoes in salted water until tender.
  • Reserve cooking water.
  • Saute onion in oil.
  • Put potatoes, water, onion and seasonings in blender and puree in several batches.
  • Return to large pot and add warm milk.
  • Stir continuously, add the cheese, margarine and seasonings.
  • Heat just until cheese melts, do not boil.
  • Makes 3 quarts.
