Ingredients
- 4 c. sliced potatoes
- 2 c. water
- 2 tsp. salt
- 1 small onion
- 1 Tbsp. oil
- 1 tsp. parsley
- 1 tsp. pepper
- 1 tsp. garlic powder
- 3 c. warm milk
- 1 c. grated cheese
- 2 Tbsp. oleo
Method
- Cook the potatoes in salted water until tender.
- Reserve cooking water.
- Saute onion in oil.
- Put potatoes, water, onion and seasonings in blender and puree in several batches.
- Return to large pot and add warm milk.
- Stir continuously, add the cheese, margarine and seasonings.
- Heat just until cheese melts, do not boil.
- Makes 3 quarts.
