Ingredients

  • 200 grams leftover mashed potato
  • 1/3 leek
  • 1 small onion
  • 1 small clove of garlic
  • 1 tbsp flour
  • 1 salt and pepper to taste
  • 1 oil for frying

Method

  • dice the onion, crush the garlic and shred the leek.
  • saute the onion and leek for a few minutes without browning.
  • add the garlic and remove from heat
  • in a mixing bowl combine all the ingredients together
  • heat the oil on a high heat.
  • divide the mash mix into 4 balls.
  • place in pan and fry until brown then flip over carefully and repeat.
  • takes about 5 minutes each side
  • I served with beans, scrambled eggs and toast with a big dollop of brown sauce.
  • as I was extra hungry I had 3 while my daughter had just the one :)
