Ingredients

  • 2 c. dried kidney beans
  • 2 qt. boiling water
  • 1/2 lb. hot Portuguese sausage or linguica
  • 1 ham hock
  • 1 large onion, diced
  • 2 potatoes, diced or 1 c. macaroni
  • 1 head cabbage, chopped
  • 1 small can diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 qt. water
  • 1 c. beef broth
  • 1/2 tsp. thyme
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • garlic salt, salt and pepper

Method

  • Wash beans and put in a large Dutch oven.
  • Cover with boiling water and let stand 1 hour.
  • Cut sausage into 1/4-inch slices. Add with onion to the undrained beans.
  • Cook for one hour over low heat until beans are tender.
  • Add other ingredients.
  • Simmer 1 1/2 hours, adding more water, if needed.
