- 2 c. dried kidney beans
- 2 qt. boiling water
- 1/2 lb. hot Portuguese sausage or linguica
- 1 ham hock
- 1 large onion, diced
- 2 potatoes, diced or 1 c. macaroni
- 1 head cabbage, chopped
- 1 small can diced tomatoes
- 1 (8 oz.) can tomato sauce
- 2 qt. water
- 1 c. beef broth
- 1/2 tsp. thyme
- 1/2 tsp. cumin
- 1/2 tsp. oregano
- 1/2 tsp. basil
- garlic salt, salt and pepper
Method
- Wash beans and put in a large Dutch oven.
- Cover with boiling water and let stand 1 hour.
- Cut sausage into 1/4-inch slices. Add with onion to the undrained beans.
- Cook for one hour over low heat until beans are tender.
- Add other ingredients.
- Simmer 1 1/2 hours, adding more water, if needed.
