Ingredients

  • 1 3/4 lb. pork tenderloin
  • 1/4 c. all-purpose flour
  • 1/4 tsp. onion powder or garlic powder
  • 1/4 tsp. pepper
  • 1 beaten egg
  • 1 Tbsp. milk
  • 1 c. crushed Ritz crackers
  • 1 Tbsp. cooking oil

Method

  • Cut pork crosswise into 4 serving-size slices. Place between 2 pieces of plastic wrap. Work from center and pound lightly with mallet to 1/4-inch thickness; remove plastic. In shallow dish, combine flour, onion or garlic powder and pepper. In another shallow dish, combine egg and milk. In third dish, place crushed crackers. Dip meat in flour mixture to coat. Dip into egg mixture. Coat with bread crumbs. In large skillet, cook slices in hot oil. Place on buns, serve with favorite dressings.
