Ingredients

  • 4 medium potatoes, cut in 1/2-inch slices
  • 1 large carrot, sliced
  • 4 (1/2-inch thick) pork chops
  • 1/2 c. water
  • 1/2 envelope dry onion soup mix (1/4 c.)
  • 2 Tbsp. soy sauce

Method

  • Place potatoes and carrots in bottom of an 11 x 7 1/2 x 1 3/4-inch dish.
  • Trim fat from steaks.
  • In large skillet, cook trimmings until there are about 2 tablespoons oil; discard trimmings.
  • In hot oil, brown steaks well on both sides.
  • In a small pan, combine water, onion soup mix and soy sauce; bring to boiling.
  • Spoon half soup mix over potatoes and carrots; top with steaks.
  • Spoon remaining soup mixture over steaks.
  • Cover and bake in a 350° oven for 1 hour.
  • Uncover and bake 10 minutes more. Makes 4 servings.
