Ingredients

  • 2 lb. fresh pork
  • 4 to 6 onions, chopped
  • 2 tsp. paprika
  • 1 1/2 c. soup stock
  • 6 large or 12 small potatoes, peeled, cut and parboiled
  • flour (for dusting)
  • salt and pepper to taste

Method

  • Cut meat into large cubes, well trimmed.
  • Put meat, onions and seasonings in heavy casserole and simmer, tightly covered, turning occasionally until meat browns.
  • Dust with flour.
  • Add soup stock, tomato puree and the parboiled potatoes.
  • Cover and continue to simmer until meat and potatoes are done.
  • Serves 6.
