Ingredients

  • 1 lb. anasazia beans, pinto or black beans
  • 2 chicken bouillon cubes
  • 1 large onion, chopped
  • 1 jalapeno pepper (optional)
  • 1 tsp. black pepper
  • 3 garlic pods or garlic powder
  • 2 qt. water

Method

  • Put washed beans in a large crock-pot or saucepan. Boil 30 minutes and let stand (away from heat) 1 hour. Drain water and rinse beans.
  • (This step helps with digestability.) Add water to cover beans, plus 1 to 2-inches more.
  • Add remaining ingredients and simmer for 1 hour on stovetop or 4 to 6 hours in crock-pot on low.
