Ingredients
- 1 lb. anasazia beans, pinto or black beans
- 2 chicken bouillon cubes
- 1 large onion, chopped
- 1 jalapeno pepper (optional)
- 1 tsp. black pepper
- 3 garlic pods or garlic powder
- 2 qt. water
Method
- Put washed beans in a large crock-pot or saucepan. Boil 30 minutes and let stand (away from heat) 1 hour. Drain water and rinse beans.
- (This step helps with digestability.) Add water to cover beans, plus 1 to 2-inches more.
- Add remaining ingredients and simmer for 1 hour on stovetop or 4 to 6 hours in crock-pot on low.
