Ingredients

  • 1 pound pork tenderloin sliced 1/2 inch thick
  • 1 egg beaten
  • 3 tablespoons milk
  • 1 saltine crackers Sleeve, crushed fine
  • 3/4 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • oil for frying

Method

  • Flatten pork with a meat mallet
  • Place egg and milk in a small bowl and blend well
  • Combine crackers, flour, and seasonings in another bowl
  • Dip pork in egg mixture, and then in crumb mixture until well coated
  • Heat oil in large skillet
  • Fry pork until deep golden brown on both sides
