Ingredients
- 1 pound pork tenderloin sliced 1/2 inch thick
- 1 egg beaten
- 3 tablespoons milk
- 1 saltine crackers Sleeve, crushed fine
- 3/4 cup all purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- oil for frying
Method
- Flatten pork with a meat mallet
- Place egg and milk in a small bowl and blend well
- Combine crackers, flour, and seasonings in another bowl
- Dip pork in egg mixture, and then in crumb mixture until well coated
- Heat oil in large skillet
- Fry pork until deep golden brown on both sides
