Ingredients

  • 2 boneless pork chops, diced
  • 1/2 c. diced carrots
  • 1/2 c. finely chopped broccoli
  • 1/2 c. frozen tiny English peas, thawed
  • 1/4 c. chopped green onion
  • 2 Tbsp. margarine
  • 3 c. cooked rice
  • 2 eggs, beaten
  • 3 to 4 Tbsp. soy sauce
  • 1/4 tsp. garlic powder
  • 1/8 tsp. ground ginger

Method

  • Saute
  • pork
  • chops,
  • carrots,
  • broccoli, peas and green onion in margarine
  • in a large skillet 3 to 4 minutes or until pork is cooked.
  • Remove
  • from
  • skillet,
  • and set aside.
  • Cook rice in skillet
  • until thoroughly heated.
  • Push rice to sides of skillet, forming
  • well in center.
  • Pour eggs into well, and cook
  • until set,
  • stirring
  • occasionally.
  • Stir rice into eggs;
  • add
  • the vegetables and remaining ingredients, stirring well.
  • Yields 4 to 6 servings.
