Ingredients
- 2 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick)
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup peach preserves
- 1 tablespoon Dijon mustard
- 1 1/2 tablespoons water
Method
- Trim fat from chops, if necessary. Sprinkle with salt and pepper. Coat a large nonstick skillet with vegetable cooking spray; place over medium-high heat until hot. Add pork chops to skillet; cook 1 minute on each side. Reduce heat to medium, and cook 4 to 6 more minutes on each side or until done. Remove chops from skillet, and keep warm.
- Add peach preserves, mustard, and 1 1/2 tablespoons water to skillet; cook, stirring constantly, 2 minutes. Spoon over chops.
