Ingredients

  • 6 to 8 pork chops
  • 1 pkg. Lipton's onion soup mix
  • 1 c. uncooked rice
  • 1 jar mushrooms
  • 1 jar pimento (optional)

Method

  • Brown pork chops.
  • Spread rice over the bottom of a 13 x 9 x 2-inch baking dish.
  • Reserve 2 teaspoons onion soup mix and sprinkle the rest over the rice.
  • Reserve mushroom liquid and spread mushrooms over the rice.
  • Add pimentos.
  • Add enough water to mushroom liquid to total 3 cups.
  • Pour over rice mixture. Place pork chops on top of rice, then sprinkle with remaining soup mix. Cover with tinfoil.
  • Bake at 350° for 45 minutes to 1 hour, depending on thickness of pork chops.
