Ingredients
- 1 onion
- 7 potatoes, cut in 1-inch squares
- 7 eggs
- 1/4 c. olive oil
Method
- Saute onion and potatoes in olive oil in omelette pan or 10-inch frying pan.
- Cover with lid and cook about 25 minutes.
- Use the same number of eggs as potatoes.
- Blend eggs and pour over vegetables.
- Cook until solid.
- Flip and cook other side until nicely browned, about 10 minutes on each side.
