Ingredients

  • 1/2 lb low-fat cream cheese
  • 1/2 cup milk
  • 1/3 cup granulated sugar
  • 3 1/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup oil
  • 7 lb small yellow, red and purple plums, cut in 1/2 and pitted then sandwiched back together
  • 2 None egg whites, whisked until frothy
  • 1/4 cup sugar cubes, lightly crushed

Method

  • Mix the cream cheese, milk, sugar and a pinch of salt in a large bowl. Sift together the flour and baking powder and fold 1/2 into the cream cheese mix. Mix to a sticky dough then turn out onto a floured surface and knead in the rest of the flour and baking powder to form a soft, smooth dough. Wrap in plastic wrap and chill for 1 hour.
  • Preheat the oven to 375°F. Grease a 13 x 15 inch rimmed baking tray with butter. Roll the dough out on a lightly floured surface then use to line the baking tray. Gently press the sandwiched plums into the dough, brush the egg whites over the top then sprinkle with the crushed sugar cubes. Bake for 40-50 mins or until the plums are tender and the dough is golden brown around the edges. Serve warm or cold cut into small slices.
