- 2 TBS unsalted butter
- 1 large Onion, sliced
- 1/2 lb or 8oz of shiitake, oyster or portobello mushrooms, roughly chopped
- 2 cloves Garlic, minced
- Salt and Pepper, to taste
- 1 Cup Vegetable Broth
- 1 TBS
- 1.5 TBS Flour
- 1 Cup Milk
- 1/2 C Heavy Cream
- 2.5-3 lb Beef Round or Beef Cubes
- 1 lb or 16 oz of White or Brown Mushrooms, sliced (not too thin, they will shrink a bit)
- 1/2 Cup Cognac
- 1 C Beef Broth
- 2 large Onions, thinly sliced
