Ingredients

  • 1/2 pound unsalted butter
  • 1/2 pound margarine
  • 1 1/4 cups sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 5 cups all purpose flour

Method

  • Cream together butter, margarine and sugar
  • Add the egg and vanilla extract, mixing just until combined Slowly mix in flourFor Checkerboard Cookies:Divide the dough into two, adding cocoa powder to one half. Divide each portion into two once more (leaving four quarters of dough: two plain, two chocolate). First roll each quarter into a long tube, then square off the sides Place one plain tube beside one chocolate tube for the first row, then top with the alternating colours for the second row. Gently press together into one roll. Wrap in plastic and refrigerate. When chilled, using a sharp knife,
  • Bake in a 350-degree oven for 12 minutes.
  • For Toblerone Cookies:Break a bar of Toblerone chocolate into small pieces and wrap cookie dough around chocolate pieces Bake in a 350-degree oven for 30 minutes.
  • For Jam Cookies:Divide dough into two halves. Roll out one half and cut out cookies using a round cutter. Place on cookie sheets Repeat with other half of dough, however also cut a smaller hole out of each cookie (leaving an "o" shape)
  • Bake in a 350-degree oven for 12 minutes and assemble with jam
