Pink Parfaits Recipe - strawberry gelatin

Method

• In blender container combine gelatin and boiling water.
• Cover, blend at high speed till gelatin is dissolved, about 20 seconds.
• Cut frzn strawberries in half.
• Allow half to thaw for topping.
• Add in remaining strawberries to gelatin; blend till nearly smooth.
• Add in strawberry ice cream, a spoonful at a time, blending till smooth after each addition.
• Pour mix into 4 parfait or possibly dessert dishes.
• Chill.
• Before serving, garnish with remaining strawberries.
• Recipe can be doubled and topped with Cold Whip or possibly other whipped topping.
