Ingredients

  • 2 eggs
  • 2 c. sugar
  • 1 c. oil
  • 2 tsp. vanilla
  • 3 c. flour
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 c. shredded zucchini (pat dry)
  • 1 (8 1/4 oz.) can crushed pineapple, drained
  • 1 c. coarsely chopped nuts
  • 1 c. dark raisins

Method

  • Beat eggs; add sugar, oil and vanilla.
  • Beat until foamy. Stir in zucchini and drained pineapple.
  • Add dry ingredients; blend well.
  • Add nuts and raisins.
  • Pour into 2 well greased and floured loaf pans.
  • Bake at 350° for 1 hour or until done.
