Ingredients

  • 1/4 c. shortening
  • 1/2 c. sugar
  • 1 c. sifted cake flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 c. milk
  • 1 tsp. vanilla
  • 2 Tbsp. brown sugar
  • 1 tsp. grated lemon rind
  • 1 can sliced pineapple, drained

Method

  • Cream shortening and sugar.
  • Add egg and beat thoroughly.
  • Mix dry ingredients together and add alternately with milk to creamed mixture.
  • Add vanilla and grated lemon rind.
  • Melt butter in 9-inch round cake pan.
  • Sprinkle brown sugar evenly over the butter or margarine.
  • Arrange sliced pineapple in cake pan.
  • Pour batter over this and bake at 350° for 30 minutes.
  • Turn out immediately and serve with whipped cream.
