Ingredients
- 1/4 c. shortening
- 1/2 c. sugar
- 1 c. sifted cake flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. milk
- 1 tsp. vanilla
- 2 Tbsp. brown sugar
- 1 tsp. grated lemon rind
- 1 can sliced pineapple, drained
Method
- Cream shortening and sugar.
- Add egg and beat thoroughly.
- Mix dry ingredients together and add alternately with milk to creamed mixture.
- Add vanilla and grated lemon rind.
- Melt butter in 9-inch round cake pan.
- Sprinkle brown sugar evenly over the butter or margarine.
- Arrange sliced pineapple in cake pan.
- Pour batter over this and bake at 350° for 30 minutes.
- Turn out immediately and serve with whipped cream.
