Ingredients
- 1/2 c. butter or oleo
- 1 c. brown sugar
- 6 or 8 slices drained pineapple
- 6 or 8 maraschino cherry halves
- 3 egg yolks
- 1 c. sugar
- 5 Tbsp. pineapple juice
Method
- Melt butter in heavy skillet.
- Add sugar and mix well.
- Lay slices of pineapple in pattern in bottom of a skillet or sugar cake pan.
- Put cherry halves in center of each pineapple slice. Decorate with pecan pieces between slices.
- Beat egg yolks.
- Add sugar and pineapple juice; mix well.
- Sift flour and baking powder together.
- Stir into egg mixture.
- Fold egg whites.
- Spoon over pineapple in skillet.
- Bake at 350° for 45 minutes to 1 hour or until done.
