Ingredients

  • 1/2 c. butter or oleo
  • 1 c. brown sugar
  • 6 or 8 slices drained pineapple
  • 6 or 8 maraschino cherry halves
  • 3 egg yolks
  • 1 c. sugar
  • 5 Tbsp. pineapple juice

Method

  • Melt butter in heavy skillet.
  • Add sugar and mix well.
  • Lay slices of pineapple in pattern in bottom of a skillet or sugar cake pan.
  • Put cherry halves in center of each pineapple slice. Decorate with pecan pieces between slices.
  • Beat egg yolks.
  • Add sugar and pineapple juice; mix well.
  • Sift flour and baking powder together.
  • Stir into egg mixture.
  • Fold egg whites.
  • Spoon over pineapple in skillet.
  • Bake at 350° for 45 minutes to 1 hour or until done.
