Ingredients
- 1 baked 8-inch pie shell
- 2 Tbsp. cornstarch
- 3/4 c. sugar
- 1/2 tsp. salt
- 2 3/4 c. crushed pineapple
- 2 eggs, separated
- 1 Tbsp. lemon juice
Method
- Combine cornstarch, 1/4 cup of the sugar and salt in a saucepan.
- Add pineapple and cook, stirring constantly, until clear and thickened.
- Add egg yolks which have been beaten with 1/4 cup of the sugar.
- Cook for 1 minute.
- Cool.
- Then add lemon juice and pour into baked pie shell.
- Top with a meringue made by beating the 2 egg whites until quite stiff.
