Ingredients

  • 1 baked 8-inch pie shell
  • 2 Tbsp. cornstarch
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 2 3/4 c. crushed pineapple
  • 2 eggs, separated
  • 1 Tbsp. lemon juice

Method

  • Combine cornstarch, 1/4 cup of the sugar and salt in a saucepan.
  • Add pineapple and cook, stirring constantly, until clear and thickened.
  • Add egg yolks which have been beaten with 1/4 cup of the sugar.
  • Cook for 1 minute.
  • Cool.
  • Then add lemon juice and pour into baked pie shell.
  • Top with a meringue made by beating the 2 egg whites until quite stiff.
