- Cake:
- 1 cup (2 sticks) butter
- 2 eggs
- 1 cup milk
- 2 cups granulated sugar
- 3 cups flour
- 2 teaspoons baking soda
- 1 1/2 cup mashed bananas (about 3 bananas)
- Icing:
- 8 oz pkg cream cheese (room temp)
- 1 Tablespoon vanilla
- 1 Tablespoon milk
- 2 Tablespoons butter
- 2 or 3 cups powdered sugar
- 1 cup chopped pecans (optional)
Method
- For cake:
- Cream butter and sugar. Add eggs. In separate bowl mix flour and soda and add to butter mixture alternating with milk. Mix in bananas. Pour into 2 or 3 greased 9" cake pans. Bake at 350 for 25 to 20 minutes or until tooth pick comes out slightly gooey.
- Part of the beauty of this cake is the moisture, so be sure you don't overbake.
- Icing:
- Warm milk and butter. Mix with vanilla and cream cheese. Slowly add powdered sugar, using as much as is needed for the icing consistency you like.
- Assembly:
- Allow the cakes to cool completely before icing. Freezing the cakes before frosting works well.
