Ingredients

  • Cake:
  • 1 cup (2 sticks) butter
  • 2 eggs
  • 1 cup milk
  • 2 cups granulated sugar
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 cup mashed bananas (about 3 bananas)
  • Icing:
  • 8 oz pkg cream cheese (room temp)
  • 1 Tablespoon vanilla
  • 1 Tablespoon milk
  • 2 Tablespoons butter
  • 2 or 3 cups powdered sugar
  • 1 cup chopped pecans (optional)

Method

  • For cake:
  • Cream butter and sugar. Add eggs. In separate bowl mix flour and soda and add to butter mixture alternating with milk. Mix in bananas. Pour into 2 or 3 greased 9" cake pans. Bake at 350 for 25 to 20 minutes or until tooth pick comes out slightly gooey.
  • Part of the beauty of this cake is the moisture, so be sure you don't overbake.
  • Icing:
  • Warm milk and butter. Mix with vanilla and cream cheese. Slowly add powdered sugar, using as much as is needed for the icing consistency you like.
  • Assembly:
  • Allow the cakes to cool completely before icing. Freezing the cakes before frosting works well.
