Ingredients
- 1 (8 oz.) can pineapple chunks in juice, drained
- 3 green onions, finely chopped
- 1 Tbsp. jalapeno, seeded and minced
- 2 Tbsp. fresh cilantro leaves
- 1 Tbsp. fresh lime juice
- 1/8 tsp. salt
Method
- Process all ingredients briefly in food processor or mix as well as you can.
- Serve chilled or at room temperature.
- Serve as an appetizer with baked tortilla chips or as a relish. This is a pretty yellow and bright green salsa.
- Yields 4 servings (1/4 cup each).
