Ingredients

  • 1 graham cracker crust
  • 1 c. crushed pineapple (undrained)
  • 1 small sugar-free vanilla cook and serve pudding
  • 1 small pkg. sugar-free lemon Jell-O
  • 1/2 c. water
  • 1 (8 oz.) pkg. fat-free cream cheese
  • 1/2 tsp. coconut extract
  • 4 packs sugar substitute
  • 1 pkg. D-Zerta whipped topping, prepared as directed on box

Method

  • In medium saucepan, combine pineapple with juice, pudding mix, Jell-O and water.
  • Cook over medium heat, stirring constantly, until mixture starts to boil.
  • Remove from heat; cool completely.
